Originally from Brazil, Carlos brings over two decades of global pastry experience to Bácús at Sweeney's Hotel. Trained in classical European techniques and having honed his craft in kitchens from Paris to Ireland, Carlos blends precision with creativity. Whether hand-piping delicate patisserie or crafting the perfect savoury tart.
At Bácús, he leads a small but passionate team, dedicated to quality ingredients, elegant finishes, and baked goods that are as beautiful as they are delicious. From signature cinnamon rolls to bespoke celebration cakes, every item is made with care and attention to detail.
And it's not just about the sweet stuff, Carlos also oversees a range of savoury bakes, from quiches and filled focaccia to buttery pastries made fresh each morning.
Always happy to chat flavours, fillings or custom designs, Carlos brings a personal touch to everything he makes, turning everyday treats into something truly special.

Handcrafted Every Day
Led by our Head Pâtissier Carlos and Bakery Manager Briege, the Bácús team takes pride in traditional techniques and imaginative creations. Each morning, trays of buttery croissants, cinnamon rolls, tarts, cakes and breads are brought fresh from the ovens to the shelves, ready for takeaway or to enjoy in the Bakery or Courtyard.

Everything is crafted in-house by our bakery team with the same care and attention to flavour that defines our sweets.
